Chewy Chai Cookies!
With only 106 calories, this recipe is ideal for when you need a delicious hit of panela sugar sweetness or an afternoon pick me up. Chewy Chai Cookies offer a soft chewy interior with a slightly crispy exterior, a chai infused butter-like base that makes them irresistible.
We don't think a cookie can get any better than this!
Here’s the recipe:
- 2 & 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 & 1/2 cups Instant Chai Organic Tea
- 1 cup unsalted butter, softened
- 1 egg
- 1/2 teaspoon vanilla extract
Here’s how you make them:
- Preheat oven to 170 Celsius. Line a baking sheet with parchment paper; set aside.
- Set aside ¼ cup of Instant Chai Organic Tea & reserve for rolling the cookies. You will need to sift the Instant Chai Organic Tea first to remove any bark sediment from the ground cinnamon.
- In a large bowl, sift together flour, baking soda and salt together. Set this aside.
- In the bowl of a stand mixer fitted with the paddle attachment or in a large bowl with an electric mixer, beat the butter and vanilla extract and fluffy, about 3 minutes. Then add the remaining Instant Chai Organic Tea. Make sure you sift the Chai first to remove any bark sediment from the ground cinnamon.
- Beat in egg and combine the other sifted ingredients slowly until fully incorporated.
- Using a small scoop (2 teaspoons) roll dough into balls and then into the reserved Instant Chai Organic Tea. Place dough balls on prepared baking sheet about 1 1/2 inches apart.
- Bake in preheated oven for 8 to 10 minutes.
- Let stand on baking sheet two minutes before removing to cool on wire racks.
